Heat oil in a kadai, add mustard seeds, allow it to splutter. Add cumin seeds, chana dal, urad dal, dry red chillies and cashew nuts. Saute till the dals turn golden brown. Add curry leaves and onion and fry till transparent.

Add ginger, green chillies and fry for a minute. Add mixed vegetables, mung sprouts and saute till just tender. Now add tomatoes and mix well.

Add turmeric powder, red chilli powder and mix well. Pour water and bring the mixture to a boil. Reduce the flame and add MAGGI Masala-ae-Magic and roasted sooji. Mix well till there are no lumps. Cover and cook for 5 minutes while stirring occasionally.

Turn off the flame and garnish with roasted peanuts and fresh coriander leaves. Serve hot.
